Spicy Fish Fingers Recipe

Succulent pieces of barramundi coated in spicy crumbs and fried to perfection. These fish fingers are not just delicious but super simple to make…an instant hit with children and adults alike.
Ingredients:
1. 2 barramundi fillets (make sure that no bones are present); cut into medium thick long strips
2. 1 cup plain white flour
3. 2 eggs; beaten
4. 2 cups bread crumbs
5. 2 tsp paprika/mild chilli powder
6. Salt, to season
7. Freshly milled black pepper; to season
8. Vegetable oil; for deep frying
9. 1 tsp chilli sauce
Method:

Clean the fillets and cut into strips as mentioned above.
In a plate, add ½ tsp paprika to the white flour, season lightly with salt and keep aside.
In another bowl, whisk the eggs with chilli sauce, season lightly with salt and keep aside.
And in another plate, mix the breadcrumbs with ½ tsp paprika and season lightly with salt.
Add the remaining paprika to the fish pieces, season with salt and pepper; keep aside.
Take each piece of fish, roll in the flour lightly, dip in the egg wash and then coat well with the breadcrumbs. Repeat the process for all the pieces; refrigerate for 15 minutes before frying.
Heat enough vegetable oil for deep frying and ensure that the oil is at the right temperature or the outsides will cook fast without the fish getting cooked all the way through.
Deep fry the fish fingers in batches and serve hot with tomato sauce and mayonnaise.
Note – Any type of white fish with a firm flesh can be used for this recipe; prawns also make a good alternative.
